A Thoughtful Way to Support a Friend in Hardship

When someone you love is going through a difficult time—whether it's a loss, illness, or another hardship—it’s natural to want to help. Many people drop off a meal, which is always appreciated, but sometimes what’s really needed is something simple, fresh, and easy to grab throughout the day.

That’s why I love putting together a breakfast and snack care package instead of a traditional dinner. It’s the perfect way to make sure your friend has something nourishing to eat first thing in the morning or when they need a quick snack—because let’s be honest, grocery shopping is usually the last thing on their mind.

What to Include in a Thoughtful Care Package

Rather than a big meal, I focus on fresh, comforting, and protein-packed options that require zero prep:

🍋 Lemon Blueberry Muffins

These muffins are the perfect mix of sweet and tangy, making them a comforting breakfast or snack option. They’re soft, flavorful, and easy to eat on the go.

🥜 Protein Balls

Hard times can leave people exhausted, and a quick, protein-packed snack is such a lifesaver. These protein balls are full of healthy ingredients and provide a boost of energy without requiring any effort to prepare.

🍎 Fresh Fruit & Veggies

A bowl of chopped fruit and veggies is a refreshing addition to any care package. Most people craving something fresh just don’t have the time or energy to wash, chop, and prep produce—so this small act of kindness goes a long way.

Packaging it Up

I keep it simple and convenient:

  • Everything goes into disposable to-go containers, so there’s no pressure for them to return anything.
  • I place the containers in a kraft paper bag, which feels thoughtful but not overwhelming.
  • If I have time, I add a small note of encouragement—something as simple as “Thinking of you. Hope this helps in some small way.”

People are so used to receiving full dinners after a loss or hardship, but breakfast and snacks are often overlooked. This package fills that gap in such a practical way. Lemon Blueberry Muffins

  • 1/2 cup salted butter (melted)
  • 2/3 cup sugar
  • 1 lemon (zested and juice)
  • 1 cup plain yogurt
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 cups all-purpose flour
  • 1 1/2 cups fresh or frozen blueberries
  1. Preheat the oven to 375°F. Line a 12-ct muffin tin with cupcake liners or grease with nonstick cooking spray.

  2. In a large mixing bowl, combine the butter, sugar, lemon zest and juice, yogurt, eggs, and vanilla. Whisk until smooth.

  3. Add the baking powder, baking soda, salt, and flour. Using a rubber spatula or spoon, stir until just combined. Add the blueberries and stir until evenly distributed.

  4. Use a large scoop to fill each of the muffin cups with batter. Bake for 25–28 minutes, until golden brown on the top and a toothpick inserted into the center comes out clean.

You can sub out the blueberries for diced strawberries or raspberries as well!

Peanut Butter Chocolate Chip Protein Balls

  • 1 cup peanut butter
  • 1/2 cup honey
  • 1 tsp vanilla
  • 1/4 cup milled flaxseed or protein powder
  • 1 1/2 cups oats
  • 1/2 cup mini chocolate chips
  1. Combine peanut butter, honey, vanilla and flaxseed in the bowl of a stand mixer.  Mix well.

  2. Add oats and chocolate chips.  Mix to combine.

  3. Use a mini cookie scoop to form balls.  If stacking, use parchment paper between layers.

  4. Store in the fridge or freezer.

You can use any nut butter in place of peanut butter.

For a smoother, more cookie-dough-like texture, use blended oats or Kodiak Cakes flour in place of the oats.

If you're using all-natural peanut butter, you may need to add a little more honey or some melted coconut oil to help bind the protein balls together better (if the mixture seems dry and crumbly).
